This light and healthful quinoa salad is ideal for lunch or dinner. It also makes an excellent side dish for any meal.
Ingredients
For the Dressing:
🔸️1/4 cup olive oil
🔸️1 clove minced garlic
🔸️2 tbsp lemon juice
🔸️1 tbsp pure maple syrup or honey
🔸️Vinegar
🔸️Kosher salt and black pepper to taste
For the Salad:
🔸️2 cups cold cooked quinoa
🔸️2 cups fresh spinach leaves chopped
🔸️1 cup chopped cucumber
🔸️1 cup halved grape or cherry tomatoes
🔸️1 large avocado pitted, peeled, & chopped
🔸️2 green onions sliced
🔸️Kosher salt and black pepper to taste
Method
🔸️ Make the dressing first. Whisk together the olive oil, garlic, lemon juice, vinegar, maple syrup or honey, salt, and pepper in a small bowl or jar. Place aside.
🔸️Combine quinoa, spinach, cucumber, tomatoes, avocado, and green onions in a large mixing basin.
🔸️ Drizzle dressing over salad and gently mix until it's well-coated. Season to taste with salt and pepper. Serve.
