Vegetable Biryani Recipe

🔸3/4cup Oil 
🔸2- ½inch piece Cinnamon
🔸2tablespoons Ginger Garlic Paste
🔸2large Onions thinly sliced
🔸½kg cauliflower, peas, carrots, potatoes, french beans cut into 1/2 inch dices 
🔸5cups Coriander and Mint leaves 
🔸4medium Tomatoes finely chopped
🔸4teaspoons Coriander powder
🔸4teaspoons Chilli powder
🔸1 1/2teaspoon Salt
🔸1teaspoon Garam Masala
🔸1cup plain Yogurt or Curds
🔸1kg long grained Basmati rice 
🔸2tablespoon Salt
🔸1tablespoons Oil
🔸10-12strands Saffron
🔸2tablespoons Hot Milk
🔸3-5Green Chillies slit lengthwise.
🔸2tablespoons Ghee


Steps to cook

🔸Soak Rice in water for about 30-40 minutes and then drain the water from the rice completely and keep aside.
🔸Heat milk in a pan and then soak saffron strands in hot milk for 5-10mins.
🔸Heat oil in a pan and to that add cinnamon ,clove ,cardamom and bay leaves.
🔸When spices begin to crackle and sliced onion, chopped green chilly, ginger garlic paste and saute on a medium heat.
🔸Add veggies, mint and coriander and stir fry over low heat till half done.
🔸To that add coriander powder, chilli powder, salt , tomatoes and mix well and cover and allow it to cook for 10-15mins.
🔸Add some water if needed.
🔸Add yogurt and garam masala to the cooked veggies and mix well.
🔸Once the mixture is ready add rice on top making an even layer.
🔸Drizzle saffron milk and ghee and cook for another 10-15mins.
🔸Once cooked sprinkle some fried onions and serve hot.
