Biryani is a famous dish in India these days due to its spice, taste, and flavour. The most common is dum cooking, which provides a balanced spice and flavour when cooked in a specific method.
Ingredients
🔸️2 tbsp oil
🔸️2 tbsp ghee
🔸️1 tsp cumin
🔸️1 bay leaf
🔸️1 inch cinnamon
🔸️½ tsp pepper
🔸️4-5 cardamom
🔸️4-5 cloves
🔸️1 black cardamom
🔸️1 javetri
🔸️1 onion (sliced)
🔸️1 tbsp ginger garlic paste
🔸️1 carrot chopped
🔸️1 potato chopped
🔸️5 beans chopped
🔸️3 tbsp peas
🔸️5 florets gobi
🔸️½ capsicum cubed
🔸️Salt 1 tsp
🔸️1 cup curd
🔸️2 tsp biryani masala
🔸️1 tsp chilli powder
🔸️½ tsp turmeric
🔸️2 tbsp mint
🔸️2 tbsp coriander
🔸️2 tbsp fried onion
🔸️1½ cup basmati rice soaked
🔸️2½ cup water
🔸️2 tbsp turmeric milk
Method
🔸️ First, heat 2 tbsp oil and 2 tbsp ghee in a saucepan. Sauté until the spices become aromatic.
🔸️Add 1 onion, 1 tbsp ginger garlic paste, sauté until golden brown.
🔸️ Add 1 carrot, 1 potato, 5 beans, 3 tbsp peas, 5 florets gobi, and ½ capsicum.
🔸️ Stir in 1 teaspoon salt for 2 minutes, or until the veggies become crisp.
🔸️ Now add 1 cup of curd and stir thoroughly.
🔸️ Cook till the oil separates from the sides, then add 2 tsp biryani masala, 1 tsp chilli powder, and ½ tsp turmeric.
🔸️Add 1 cup of water. Then Add 2 tbsp mint, 2 tbsp coriander, and 2 tbsp fried onion.
🔸️ Spread 1½ cup basmati rice in phases to build layers.
🔸️ Layer rice, coriander, mint, and fried onions on top. 1 teaspoon biryani masala and 1 teaspoon ghee on top.
🔸️ Pour 1½ cups of water from the sides, followed by 2 tbsp turmeric milk.
🔸️ Cover the cooker and cook for 2 whistles on medium heat.
🔸️ Once the pressure diminishes, fluff the rice lightly or transferring it to a large vessel.
🔸️ Finally, serve the Veg Biryani with raita or salad.
